Science mixes with food for a little gastronomic slight of hand:

Experimental Chef Son is establishing quite a reputation around here for his food play surprises at Christmas. Last year involved fooling taste buds to make everything taste sweet... handy should you find yourself faced with a shot glass full of vinegar sometime.
This year's surprise necessitated the use of some safety equipment and only the slight risk of explosion.... and credit for the idea and process goes to the brilliant minds behind Seattle-based chefsteps.com

No, this is not Halloween but yes, that is dry ice!






This is the part where you have to wait 12 hours. 
Which leaves lots of time for experimenting with ice-cream type creations with the left-over dry ice. 




And then, eventually you end up with what looks like a lovely platter of fresh fruit!


This is where the visual nature of the blog fails. I cannot show you that inside each one of these fruits is a carbonated version of the original. They look normal, you'd never know anything had happened, but when you bite into one, there are fizzy carbonated bubbles inside. It's amazing. It's magical. It's Christmas. 
Which only leaves us to wonder what's in store for next year!

    That's cool. Where would one even get dry ice?? I'm still trying to get my head around "Aquafaba"!
